I think quitting may be a bit extreme but perhaps changing the type of discipline withing the disciplines might bring more of the fun back and less of the Type A approach. Maybe try a few bike races, I remember you mentioning it might be something you wanted to try. Though it's a lightly different skill set if could be a blast. Xterra events, ultra's, crits, mountain bike races? All will benefit your strong cycling skills while keeping you fit for the triathlons you want to do in the future.
